Carlos holds a PhD in biology and a Master degree in Quality Management. He has been a principal scientist at AZTI since 1996. Carlos has assessed several food companies in the implementation of quality management systems and has participated as researcher and principal scientist in several R&D National and Regional funded projects and in in-ternational projects in the domain of the valorization of food industry by-products as well as in food product development involving food companies. In recent years his work has focused mainly on the re-search and development of alternative proteins through the recovery of by-products from the food industry.
