Dr Jing, the co-founder of Soynergy, is passionate about creating healthy and nutritious plant-based functional food from sustainable materials. Her food-upcycling journey started from soy pulp (okara), a by-product of soymilk and tofu manufacturing. Using fermentation technology, she converted okara into probiotic drink and bio-okara powder that potentially promote gut health and immunity. Dr. Jing has 8 years research experience in functional food development. Now she is leading Soynergy to commercialise healthy drinks and snacks, one of which called Fibreworks Chocolate Cookie containing bio-okara is available on the market.
