Jim has 30 years’ experience in food with roles for Unilever, PepsiCo and Premier Foods and is motivated by the combination of innovation, biotechnology, and collaboration to create sustainable large-scale food solutions.

He co-founded ENOUGH and is passionately excited by the opportunity for ABUNDA® mycoprotein to address a growing market need.

ENOUGH’s purpose is “to make protein sustainable” and address this by growing mycoprotein, an existing advantaged ingredient with an established market role, more sustainably and at lower cost than all other protein options.

Jim will be part of the panel discussion on "Fermenting a sustainable future for food" on Day 4.
