Calum has spent 16 years working in hospitality, the last three of which at William Grant and Sons, a sustainable spirits brand focused on turning trash into treasure. He's helping Discarded pioneer the sustainable spirits movement and show that hospitality can reduce waste one sip at a time.

Prior to this he ran award winning bars and restaurants throughout the Scottish central belt including The Balmoral bar at the Balmoral hotel, and the sustainable seafood bar/restaurant The Finnieston in Glasgow.

Calum will be part of the panel discussion on "Food waste in focus" on Day 3.
